I was out to lunch with a great friend of mine when I came across this dish. It was a beautiful summer day, we both were enjoying the transition into motherhood. I met her at a fun LA cafe and ordered the pesto rice with a sandwich and tea. My life was changed forever that day! I’ve found a way to recreate the dish in under 5 minutes! That’s right… Now, I’m shortcut chef, so I won’t be making my own pesto, and we’ll be using 90 second rice, but I promise you, it’s still delicious!
What you need:
Bag of 90 second rice-brown, quinoa, and white rice all work.
Bag of Frozen Peas
Feta Cheese Crumbles
Pesto- My favorite is Kirkland from Costco
Follow directions to cook rice. Dump half the bag of frozen peas into a medium mixing bowl. The heat from the rice will thaw the peas, I just saved you 5 minutes!!! BEEP. When the rice is cooked toss it in with the peas. Take 2-3 heaping spoonfuls of pesto and mix. Last add the feta cheese, however cheesy you want it. That’s it, serve.
This rice makes a great side dish to a meal, or a great rice bowl. I like to add some diced chicken and cherry tomatos with a little balsamic drizzle if I’m feeling fancy. My kids love this dish. It can be served warm or chilled. I double the recipie to take to pot lucks. It’s always a winner!
