Summer time is the time to get outside! Sometimes I want to host a BBQ without actually firing up the grill! When the grill is going we have to be super vigilant of where all the kiddos are. The grill master is stuck to one spot, and if your hubby is like mine and wants to grill with charcoal, there will smoke in everyone’s face. (I know! I know! Charcoal DOES taste better…) BBQ’s are all kinds of fun, but if you want a BBQ style get-together without the actual BBQ, here is an inspired recipe for you!
My mother made these Dugout Sandwiches all the time growing up. They are still one of my favorite go-to meals for my family now. We call them “dugouts” because we literally dig out the bread so there is more room for the filling. Just like any hot dog or burger they can be dressed any which way.
What you need
- Potatoes (1/2 potato per person)
- Onion (1 onion per 4/5 potatoes)
- Kielbasa sausage (1 per 4/5 potatoes)
- Olive oil
- French Rolls (per person)
I like to use a mandolin slicer to get all the potatoes about the same size, this way they cook evenly. I put them in a microwave safe bowl and microwave for 4 minutes, stir and cook for 4 more minutes. While they are cooking I dice the onion and the sausage. I toss the onion in a skillet with a little olive oil until they start to get translucent. Potatoes should be done in the microwave about that time, and I toss them in the skillet along with the sausage. Cook on medium heat until they start to brown.

- Additional Onion or sour kraut
- Hot Sauce
- Sour Cream
I serve my Dugouts with mustard, but the husband and kids love ketchup too! There are pretty much no limits to what you can dress these with.
