This dinner is imposter veggies! I made the noodles from zucchini and squash. The breadsticks are cauliflower. I added some white beans to the pasta as a meat substitute and filler. The sauce is tomato sauce, tomato paste, and diced tomatoes with some Italian seasoning. To make the Cauliflower Breadsticks you put the cauliflower through the food processor, mix with a little olive oil and Italian seasoning. Press the cauliflower onto a cookie sheet covered with parchment paper. Cook for 20 minutes, cover with cheese and cook an additional 10 minutes. Bake at 450.
