My Avocado tree is starting to bloom and I am so excited! There aren’t many things that avocado can’t make better. Today I’m using some green goodness to amp up my Cilantro Lime Rice! The avocado makes the rice a nice creamy texture my kids love, and is much easier for them to eat with a spoon when there is a creamy binder. Veetee rice makes this a super shortcut recipe using their 2-minute microwave rice. Seriously, you can make this dish under 5 minutes!

WHAT YOU NEED:
Cilantro Lime paste (found pre-made in your produce section)
Salt to taste
Follow heating instructions on rice. While the rice is microwaving, mash half of the avocado in a mixing bowl. Mix in a tablespoon of the cilantro paste and a smidge of salt. When rice is ready add to mixture and stir. Serve with lime slices! Your perfect summer dish in under 5 minutes!
