I’m a chili lover! I fall into the pumpkin lovers too! Until one of our recent Mommy get-togethers I had never heard of Pumpkin Chili. The chili the other mom brought to our night was amazing and it inspired me to try one of my own. I don’t usually cook with a recipe but I wanted to give you a guideline to this delish dish!
- I started with 2 pounds of ground beef – tip: don’t drain the fat!
- I added a large can of diced tomatoes
- 1 can lentils
- 1 can kidney beans
- 1 1/2 cup canned pumpkin
- 1/2 cup grated cheese
- 2 TBLS Sugar
- Chili powder to taste
- Pumpkin Pie spice to taste
- Salt & Pepper
- Top with more cheese, sour cream optional
The kids ate the chili, I made them noodles and used the chili as a meat sauce. It took some negotiation for the toddler because it was different, but the baby gobbled it up. Introducing something new with something they are familiar with is a great way to get kids to try new dishes!
