Binkie Bites: Tailgate Pizza Bar

Fall is the kickoff to my favorite time of year. Football is a big reason for my obsession with the sweater weather season! Football has been a part of my life since I can remember. I think I dressed up like a cheerleader 3 or 4 years in a row during my elementary years. I have memories of watching the Raiders play with my Dad and Grandpa. I started crushing on my husband during our senior year in high school… at a football game. Yep, that means we are high school sweethearts! We follow both College and NFL football, and my husband is in multiple fantasy football leagues. We even brought our daughter to a college football game when she was just 9 months.

All this love for a sport and I can’t even throw the ball! I can throw a touchdown of a tailgate party though! We love hosting our family and friends on game days. Football creates an atmosphere for comradery and excitement. The game might be on in the living room, but everyone loves to hang out around the food. There is no better marriage than football and pizza. Cold pizza has its place but I prefer it hot. That’s why I use Red Baron singles and minis from Sam’s Club when hosting our pizza tailgates. I can grill or microwave them as people arrive. I put out a spread of different toppings and they can dress their pizza however they want. The kids love participating and building their own pizza!

This pizza tailgate spread includes an assortment of Pepperoni and Olive, Pineapple and Bacon, Meat Lovers, and Veggie for toppings. I had Pesto, Ranch, and BBQ Sauce for dips. A pizza salad, and pizza popcorn.

Toppings

Pepperoni and Olive: 1 can diced olives and mini pepperonis.

Pineapple and Bacon: 1 can diced pineapple and some packaged real bacon bits

Meat Lovers: Mini pepperonis, bacon bits, and some ground sausage

Veggie: Threw 2 mushrooms and 1/2 yellow, 1/2 green bell pepper into a food processor and sautee

Salad: To make a pizza salad I dice up mozzarella cheese, toss in some mini pepperoni and tomatoes, and leave some banana peppers and parmesan for those who want a little extra.

Pizza Popcorn: Microwave some popcorn and toss with parmesan cheese and oregano. Make sure you grab a handful, cause it goes quick!
