Binkie Bites: Shortcut Cauliflower and Chicken Fried Rice

I do a lot of gluten free dishes after removing it from my diet to nurse my second baby. While rice is gluten free, my hubby likes to stick to a high protein diet, so rice is not so much ideal for him. I have gotten him on board with cauliflower rice though. He is always pretty surprised at how little it still tastes like cauliflower. Here is my shortcut version. Only 30 minutes from start to finish!

What you need:

Bag of cauliflower rice – they sell it most grocery stores now already in rice form!

Rotisserie Chicken

Frozen veggie melody of choice

2 eggs

Soy sauce (ours was gluten free)

Green onions (optional)

Minced garlic

Olive oil (about a tablespoons

Let’s get started! On medium heat pour about one tablespoon olive oil and a heaping scoop of minced garlic into the pan. Add half the bag of frozen veggies and stir. Add bag of cauliflower rice and some soy sauce. This is personal preference as I always cook to taste, but I’d say about a tablespoon or more. Stir occasionally for about 5 minutes. During these 5 minutes pull some chicken off the rotisserie and chop. Chop the green onions (save a few to garnish), add both to pan. Once cauliflower is cooked and soft, about the 5 minutes, break both eggs on top of rice, let stand about a minute then stir. Once egg is completely cooked remove from heat and serve.
